Justine’s Chai Poached Pears & Cardamom Chocolate
One of my favorite recipes and probably the quickest and easiest one! It reminds me of my childhood and it is so easy and so delicious. I cannot recommend this recipe enough! It is an amazing dessert for any occasion, whether it’s a friend’s dinner party or a romantic date.
- 5 small pears
- 4 cups of water
- 2 tsp of sliced fresh ginger
- 1 tsp of whole cloves
- 1 star anise pod, broken in half
- 4 cardamon pods, broken in half
- 2 cinnamon stick, broken in half
- 1 cup of cocoa powder
- 1 cup of cocoa butter
- 180 ml of maple syrup
- 1/3 cup of pistachio
Pour the water in a pan, add all the spices* (ginger, cloves, anise, cinnamon and cardamon - keep 1 cardamon pod for later), bring to a boil.
Peel the pears and place them in the water. Turn the heat down to a simmer. Cover and cook for 20 to 30 minutes - cooking time depends on the pear size, leave them in the water until you can easily stick a knife through the pears.
In the meantime, slowly melt the chocolate powder, cocoa butter and maple syrup together using a small pan. Stir well to obtain a smooth texture. Open the last cardamon pod and add it to the chocolate for 10 minutes before removing it.
Drain the pears, place them on a plate and dress with the chocolate topping. Crush the pistachios with a knife and sprinkle on the chocolate. Et Voila!
*for the lazy or/and busy ones, this step can be replaced by dropping a Chai tea bag in the water :)
