Nisha’s Delicious Healthy Twix Bars

We all crave a little something sweet now and then; the challenge is to indulge in dessert with no guilt! The talented Nisha, Founder of Nbars shares her delicious healthy twix bars recipe for whenever you feel like baking! She calls them the Copycat Twix Bars :)

Those delicious bars are gluten-free, grain-free, refined sugar free, paleo and vegan, made of only 7 ingredients.

Ingredients (makes 18-20 bars):

Base

  • 75 g coconut flour
  • 40 ml maple syrup
  • 75 ml extra virgin coconut oil, room temperature
  • ¼ tsp pink Himalayan salt

Filling

  • 125 ml creamy nut butter
  • 100 ml maple syrup
  • 75 ml extra virgin coconut oil
  • 1 tbsp vanilla extract
  • ¼ tsp pink Himalayan salt

Topping

  • 50 ml extra virgin coconut oil
  • 30 g cacao powder
  • 25 ml maple syrup
  • Maldon sea salt flakes

Instructions:

  • Preheat oven to 175ºC.
  • Line an 8x8” square pan with parchment paper or grease with coconut oil.
  • Base: Add wet ingredients to dry ingredients to form a dough; with vinyl gloves on, bring dough together into a ball. Flatten out dough evenly into prepared pan. Bake for 9 to 11 minutes, or until golden brown around the edges. Monitor every 5 minutes or so to account for differences in oven temperatures. Let cool completely.
  • Filling: Combine ingredients in a non-stick pan; let heat on low till well mixed. Pour over cooled crust and transport to fridge to set fully before adding topping.
  • Topping: Whisk together ingredients and pour over cooled caramel layer. Gently hit the sides of the pan to even out the topping, then sprinkle with Maldon sea salt flakes. Refrigerate till solid, then use a sharp knife to cut long fingers, 18-20 based on desired thickness and store in the fridge. Keeps for at least a week!
